It draws inspiration in the the much-loved payasam made with creamy coconut milk sweetened with freshly ground cardamom and cinnamon. Our version uses a black tea with coconut, cardamom and cinnamon, lifted by a dash of fragrant vanilla for a richly festive cup of tea
